This is going to leave your house smelling better than it has in a while! The combination of fresh orange juice, the sweetness of honey, and star anise as it burns away at the bottom of your pan is glorious.

Juice of 1 large orange (use two if small)
Grated rind from 1 lime
1 Tbsp Honey (try Orange Blossom honey)
4 Star Anise
Blade roast
Salt & pepper
1. Add the orange juice to a mixing bowl and stir in the honey until the honey has properly disolved into the juice.
2. Add the lime rind and star anise, plus salt and pepper to taste, stir well and leave to sit for a short while.
3. In a large steal or cast iron pan, add a small amount of oil and then place the cut of meat into the oil.
4. Baste the whole surface of the meat and finally pour the rest of the bowl over until it covers the bottom of the pan.
5. Place in a pre-heated oven at 180 Celcius.
6. Cook for 1h 15m or appropriate for the size of your roast.
7. Ensure you allow to rest for 10-20 minutes before carving.
